Last March, Food Service operations transitioned from in school meal service to grab-and-go meal sites over the course of a weekend. The drastic shift was an enormous feat to overcome and required tremendous teamwork behind the scenes. Cold storage in all school kitchens was stocked full of food that couldn’t be used and needed to be moved to make room for individually wrapped items that the community felt safe picking up. With the knowledge that every other school district in the country was facing the same challenges and looking for similar solutions, planning needed to be done quickly. During the first few weeks of closure, the team scrambled to pack up food while simultaneously strategizing ways to improve the meals, process, and accessibility. In April, the planning paid off, and the newly developed, pre-packaged, frozen, ten-meal boxes were being distributed. By December, ten meal boxes evolved into fourteen, complete with a bag of fresh fruit and milk. The latest improvement was the addition of supper meal boxes (pictured above). Food Services is proud to say they’ve served over 7 million meals since the start of the pandemic!
